Last Morning In The Keys

Good Morning Sunshine!
Jacob........I know you're in thar...please open up the screeen!
~Adapted from an actual statement made by my friend Angie's
brother, Stephen,years ago when we were kids. We had locked him out of a cabin
we were playing in. It was hilarious and I've never forgotten it~
(I know some of you will appreciate that short, reminiscent story:)

" Good Morning Mommy! Do you want to join us for cereal?"

"Sure ; But we've got to hurry! We've got more fun to make up the road!"

I told you......

....... This baby loves trying to eat the beach!!!
We turned taking shells away a game.
He gave up on the beach and decided to take everyone's water instead!

The preventative measure I took so Jacob would not ingest any more sand!
The boat the boys insisted was, "a pirate ship!"

Our Waterfront Campsite

One thing I love most about my little man Jackson
is that he has an AMAZING imagination! He is ALWAYS
thinking and asking so many questions. I love that he wants to learn.
(and he can make something useful to play with out of anything! :)

I think this is my favorite picture of the whole trip! I walked out of the tent from laying Jacob down and was going to call for the kids to come over to roast some marshmallows.I looked up and saw this. Haley had carried her chair down to the dock and set it up and was enjoying the beautiful scenery around her! Dosn't she look so beautiful?!?!

At The Beach

Beauty at the beach~
The beaches at Key West were alot different than my imagination had imagined!
They were rocky and not as clear as the Florida gulf beaches which I had
hoped they would be like. But, we all still had great fun!

On The Way

We encountered this squirrel somewhere in Georgia.
He was not afraid of us by any means. So... he joined our
picnic! We fed him Cheetos, tomatoes, grapes and everything
else Jordan took off his sandwhich!

we "camped out" in our van at a Wal-Mart in Miami!

O me! That wasn't fun for Dell or I,but thats not what counts.The kids thought it was the coolest thing ever to do! Can you tell by their well rested, happy little faces?!?!

Note to ourselves: Make sure the city we plan on stopping at, isn't having some huge convention where all campgrounds or hotels in the entire vicinity have "No Vacancies."

The Christmas Card Photo Shoot That Flopped!

YUM, YUM, YUM!

These Lasagna Rolls are awesome!
Here's the recipe!
Sauce~
2 tbsp butter
4 tsp flour
1 1/4 cup whole milk
1/4 tsp salt
1/8 tsp pepper
pinch of nutmeg
Lasagna~
1 large container of ricotta cheese
1 pkg. frozen,chopped spinach-
thawed and squeezed dry
1 cup parmesan cheese
About 1 cup of finely sliced ham-
finely chopped
1 egg- I usually omit this because of Jordans
allergy but have made it both ways.
Salt and Pepper to taste.
10-12 lasagna noodles
2 cups of marinara or spagetti sauce-
I like a chunky vegetable marinara.
1 cup of mozz. cheese
To make sauce, melt butter on medium-low. Add flour and whisk for several minutes.
Whisk in milk and increase to medium-high. Whisk until it simmers and is thick and smooth.
Add salt,pepper and nutmeg.
Preheat oven to 450.
Prepare lasagna noodles to just tender but still firm to bite.
(make sure to boil in olive oil so they won't stick.)
Arrange noodles in a single layer on a cookie sheet.
For filling, mix ricotta cheese,spinach,ham,egg, parmesan, salt and pepper well.
Spread filling evenly on noodles.( I like mine to be stuffed.)
From one end, roll like a jelly roll.
Pour sauce to cover the bottom of buttered glass dish.
Place Lasagna Rolls seam side down. Pour marinara sauce over the rolls and then sprinkle with cheese and parmesan. Cover tightly with foil and bake for 20 min or until bubbly.
Uncover and bake 15 min or until golden. Let stand about 10 min.
Serve with extra marinara, salad and bread of your choose.
